Santorini Fava (Yellow Split Pea Puree)
Not to be confused with fava beans, Santorini's fava is a creamy puree made from yellow split peas grown on the island. Silky smooth, it's usually served warm with olive oil, onions, and capers.
Where to try it: Metaxi Mas in Exo Gonia is famous for its fava with caramelized onions.
